95% Sangiovese is supported by its traditional partners, Colorino and Canaiolo. The grapes are fermented in stainless steel with the temperature controlled to retain freshness. Once pressed, the wine is raised in a range of more or less neutral barrels, from 2000-litre Slavonian casks right down to third-use barriques. This aging builds deep complexity without imparting obvious oak characteristics. R&R
