Honorii’ Riserva, which is made up of the best and most concentrated grapes, and ismatured for 14–16 months in new barriques and tonneaux; the last wine, ‘In Terra’, is fermented and raised in buried amphora. In addition to the Sangiovese-based wines, La Viola also makes a classically dry and sapid white from the local grape Albana, as well as one on skins that is raised in amphora buried in the ground.
