100% Vermentino. Sourced from the Acquasassa vineyard, in Serdiana, planted to clay-limestone soils at about 160 metres, with a vine age of about 20 years. The fruit is hand harvested into 20kg crates, then the grapes are carefully selected in the winery to ensure pristine condition. The fruit is very softly pressed into stainless steel tanks where it is fermented at 13°C, before it rests briefly on its lees. R&R
