This is Silvia’s only straight Nebbiolo, with the fruit fermented in steel at no more than 27°C, with a relatively short maceration on skins of about 10 days, pumped over twice daily. The wine is matured in large, old oak barrels for 12 months, then rests in bottle for another 12 months before release. The wine is an elegant, red-fruited, spicy expression, channelling the cool territory with an emphasis on fragrance, purity and fine structure. R&R
