Unusually for sparkling wine, this is made only in riper vintages, such is the cool of the growing season in Valle d’Aosta – Morgex et de la Salle is the only sub-zone that can make a DOP (DOC) sparkling wine in the region. This is tank-fermented Prié Blanc elaborated using the traditional Champagne method, with all riddling and disgorgement managed manually, and no dosage added. When it is made, the production hovers around the 1000 bottle mark, so a genuinely rare and handcrafted offering. R&R
