Recioto di Soave is made by dehydrating pristine grapes in well-ventilated drying rooms, concentrating the sugar, flavours and acidity. Arzimo is made from 100% Garganega, and only the best bunches (the arzimi) at the highest ripeness levels are selected. The semi-dried grapes are fermented and pressed to barrique to mature on lees for 14 months. The result is an exotic medium-sweet expression, laced with honey, candied fruit, vanilla and apricots.
