60% Malvasia, 30% Pulcinculo, 10% Trebbiano. Hand-picked grapes are placed on reed mats for at least 4 months to dehydrate and concentrate the sugars and flavours. The frugal amount of liquid left in the grapes is then pressed to tiny casks of only 50–75 litre capacities. The barrels are then sealed and left undisturbed for 5 years. Only when the casks are broached is the quality and quantity of the wine known. What makes the grade is bottled and aged for about 3 more years before release. A tremendously rare, tremendously exciting wine, and a true labour of love. R&R
