80% Corvina and Corvinone, 20% Rondinella and other indigenous varieties. Sourced from vineyards situated on a hillside with an easterly aspect that ranges from 150–300m above sea level. The soils are rugged and rocky and are mainly comprised of clay and limestone. The organically managed fruit is hand-picked, before fermentation in stainless steel tanks, with the temperature regulated below 25°C. Once dry, the wine macerates on skins for a further 10 days, and, once pressed, rests in tank for 3 months before bottling. R&R
