From vineyards in Santa Giuletta with mainly loamy calcareous soils, the average age of the vines is 30 years, and the training system is guyot. The plots are harvested and vinified separately in order to enhance the various terroirs and the characteristics of the individual vintage. Multiple winemaking techniques are employed, including the use of whole bunches, to seek the best expression of each plot. A cold pre-fermentation maceration is followed by fermentation in tanks at a controlled temperature, during which a short pumping over is performed each day. Malolactic occurs in barriques with around 12 months aging – only the best plots are selected and combined. Bottling is followed by further bottle aging for approximately one year. R&R
