100% Chardonnay, 36 months on lees. As with the brut there is a savoury, lightly aldehydic tone to this with malt, pastry and baking bread yeast character, it has a pure vinous Chardonnay edge, but without obviously fruity notes; the palate has silky texture from the extended lees maturation and the dosage seems relatively low, there are distinct chalky nuances and a mineral texture that really distinguishes this wine and evokes Champagne, specifically from the Côtes des Blancs.
