There is something incredibly satisfying by a lovingly prepared plate of Vitello Tonnato. This dish  which features a sauce of mashed tuna, capers and anchovies has its origins in the North, with a distinct divide where the Piemontesi use mayonnaise and the Lombardians or Milanese prefer to thin the sauce with cream.

Our experience leans towards the Lombardians particularly in the wine districts of Oltrepo Pavese and Sparkling wine zone of Franciacorta near Brescia. It is easy to understand how it can become a gastronomic obsession seeking to try the traditional through to the modern iterations such as you will find at Trippa in Milano. If your in Piedmont try Koki in Barbaresco and for traditional Osteria della Villetta in Palazzolo sull’Oglio near Brescia. You can pair sparkling wine such as Franciacorta, Chardonnay from Oltrepo through to Pinot Nero.
