Recunu, Cutrera and Rucignola are traditional Sicilian grapes that were all but lost due to low productivity. From a 0.6-hectare site that Riofavara planted in 2017 by propagating cuttings from old vines, they are determined to preserve this vital piece of Sicilian heritage. Half the fruit is softly pressed, while the other half is crushed and sees minimal skin contact in the press to build complexity. Ambient yeasts are employed for fermentation and the wine is matured in oak and steel. R&R
